One-Pan Chicken in Red Cashew Sauce anyone? #daisydoulatastytuesdays

One-Pan Chicken in Red Cashew Sauce

Prep Time: 10 minutes Cook Time: 20 minutes Servings: 3 to 4 servings
What you need:
Sauce:
1 cup (250mL) cashews, soaked overnight or in boiling water, 1 to 2 hours
¾ cup (175mL) warm water
3 roasted red peppers
3 cloves garlic
3 tbsp (45mL) olive oil
¾ tsp (4mL) sea salt
½ tsp (2mL) dried oregano
½ tsp (2mL) dried thyme
¼ tsp (1mL) crushed red pepper flakes
¼ tsp (1mL) pepper

Chicken:
2lbs boneless chicken breasts cut into equal-sized large pieces (3 pieces per breast)
2 tbsp (30mL) olive oil
Salt and pepper
How to make it:
Combine all sauce ingredients in a high-powered blender or food processor. Pulse the ingredients until smooth.

Heat the olive oil in a large pan over medium heat. While the oil is heating, season both sides of the chicken pieces with the salt and pepper. Then place the chicken in the pan and cook, about 4 to 6 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate.

Add the sauce to the pan and stir, about 2 minutes, or until it is warm. Bring the chicken pieces back to the pan, tossing them in the sauce to coat evenly. Turn off heat, garnish with basil (if using), and serve immediately.
