Zucchini Lo Mein #daisydoulatastytuesdays
Momma’s I know time is of the essence and it can be often daunting to figure out what to cook as you try to juggle taking care of your family and your household. Who doesn’t love a good quick and easy noodle dish with a healthy twist?
Zucchini Lo Mein
Serves: 4 people
Prep Time: 10 mins
Cook Time: 25 mins
For the Sauce:
¼ cup reduced sodium soy sauce, or more, to taste
3 cloves of garlic
1 tablespoon freshly grated ginger
1 tablespoon light brown sugar
1 teaspoon sesame oil
1/2 teaspoon Sriracha
Ingredients:
2 medium zucchini (about 10 ounces each) or you can purchase pre-packaged spiralized zoodles from your local grocery store
1 tablespoon olive oil
3 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, cut into matchstick strips
1 cup shredded carrot
1 cup sugar snap peas, strings removed
1 teaspoon sesame seeds
Directions:
Make the sauce: In a small bowl, whisk together soy sauce, garlic, ginger, brown sugar, sesame oil, and Sriracha,; set aside.
Using a spiral vegetable slicer, cut the zucchini into long thin strands, cutting through the strands with kitchen scissors to separate them for easier serving
Heat the olive oil in a large skillet or wok over medium-high heat. Add the bell pepper, and cook, stirring frequently, until tender, 3-4 minutes.
Stir in the snap peas, carrots, zucchini noodles, and soy sauce mixture, and continue to cook until the zucchini is tender, 3-5 minutes.
Serve immediately, garnished with sesame seeds, if desired.
